Perfect Guacamole

Trigger warning for cilantro haters—this guacamole is not for you. I would go as far as to say guacamole isn’t the right dish for you in general. Feel free to enjoy as much mashed avocado as you’d like, but we can’t call it guac. Gone are the days of sickening, pureed, bland guacamole.

I estimate 1 avocado per person.

Serves 6.

INGREDIENTS:

  • 6 ripe avocados—”ripe” meaning there is a slight give when pressed with your thumb but NO more. squishy, soft avocados have sadly passed and won’t make good guacamole for taste and texture reasons.

  • 1 bunch fresh cilantro

  • 1/2 red onion

  • juice of 1.5 - 2 limes

  • 1 tsp pink salt (at least)

  • 1/2 tsp black pepper (at least)

  • chips of choice—I like to do a mix. my personal favorite is Barnana plantain chips. Siete are good for grain-free, and they JUST came out with Totopos corn tortilla chips fried in avocado oil that I’m dying to try. I love Masa Organic Corn Tortilla chips because 1) they’re organic, which is important as corn in this country is almost all GMO and heavily sprayed with pesticides, and 2) they are cooked in grass-fed tallow instead of inflammatory seed oils like sunflower, canola, vegetable, soybean, etc. It’s impossible to find chips cooked in clean oil.

  • baby carrots, halved lengthwise

STEPS:

  1. Core the avocados—halve with a knife, then pierce the core, and carefully twist to remove. tap the knife on the edge of the trash can to discard the core.

  2. Use a knife and create a crosshatch pattern on each half, as pictured above.

  3. Use a spoon to scoop out the cubed avocado into a large bowl.

  4. Squeeze 1.5 limes into the bowl.

  5. Dice red onion—halve, remove skin, and chop finely.

  6. Chop cilantro—twist off a big handful, bunch it into a tight ball, and closely chop as finely as possible. add to mixing bowl.

  7. Season generously with salt and pepper. don’t be shy! you may need to taste and add more of each after mixing. too often good guacamole is ruined by under-seasoning.

  8. Using a fork, press down and stir to gently mash until you have a nice chunky guacamole. it shouldn’t be overly blended or creamy. good texture is key while still combining the ingredients well.

  9. Taste test. probably add more lime, salt, and pepper.

  10. Serve immediately with chips and halved carrots. enjoy!
